ISO 3632 is the internationally recognized standard that outlines quality specifications for saffron, covering both saffron threads (filaments) and saffron powder. Globally, this standard ensures saffron’s authenticity, purity, and quality by assessing its key physical and chemical properties.
Key Tests for ISO 3632 Certification
In line with ISO 3632, ACS Canada oversees various tests to confirm the quality and purity of saffron. All analyses must be conducted by laboratories accredited to ISO/IEC 17025 and part of the International Laboratory Accreditation Cooperation (ILAC) network to guarantee global recognition and credibility of the test reports.
1. Color Strength Test (Crocin Content)
Determining the Color Strength of Saffron: The color strength of saffron is measured by assessing the crocin content (the main coloring compound in saffron). This test is typically performed using a spectrophotometer at a wavelength of 440 nm. Higher crocin content indicates greater color strength.
2. Flavor Test (Picrocrocin Content)
Determining Flavor Strength: This test measures the picrocrocin content, which is responsible for the flavor of saffron. It is also conducted using a spectrophotometer at a wavelength of 257 nm.
3. Aroma Test (Safranal Content)
Determining the Aroma Strength of Saffron: The amount of safranal, the main aroma compound in saffron, is measured in this test. A spectrophotometer at a wavelength of 330 nm is used to determine safranal content.
4. Purity and Adulteration Tests
Impurity Detection Test: The ISO 3632 standard specifies that saffron should not contain artificial colors or other additives. This test examines for artificial coloring agents, ensuring that the saffron is pure.
Adulteration Check: These tests include qualitative and quantitative analyses to identify potential adulterations, such as the addition of other materials to saffron threads or the use of artificial colors.
5. Moisture and Ash Tests
Moisture Test: This test measures the amount of water in saffron. The moisture content must be below the standard-specified limit to ensure saffron quality.
Ash Test: The total ash content and acid-insoluble ash content are also measured to assess the purity of saffron.
